Gastric bypass surgery tricks the body into releasing fewer hormones that say that you're hungry, making you eat less and feel satisfied. The removal of the portion of the stomach where ghrelin is made causes a reduction in the production of this hunger hormone, and ensures that the person cannot physically fit in too much food into their stomach anymore.
